This is a bar with a strong point of view. Set in a historic building where duties were once collected on goods entering the city, Taxman turns that backstory into a compact cocktail room centered on a long communal bar and a house identity that puts the focus on the drinks rather than on brand display. The result feels intimate, deliberate, and a little more original than the usual new opening.
